Description
Symphony white is an exquisite version of the White Peony variety, a delicate tea made from tea buds collected and withered prior to opening.
It creates a pale yellow, light bodied, yet complex cup with hints of honeydew and a faint floral sweetness.
The weight of each resealable zip-lock pouches is 1oz or 28 g. One tea pouch can make up to 12 cups of tea.
The amount of caffeine in tea depends on a number of factors, including the method and length of brewing or steeping. Symphony white tea has approximately 15 mg of caffeine for every 225 g. It is considered a low caffeine tea, that’s why we recommend to steep 3 minutes at 100°C.

Frances Barlow –
This is wonderful version of white peony. It’s a bit more subtle than the average peony, but has much more body and flavor than a silver needle. This is my new favorite evening tea.
John Kenna –
The flavor is light, delicate, very slightly sweet and slightly grassy. Normally I like sweet flavored teas, but this tea I loved purely on its own – no sugar or cream or flavoring.

This is such a calming tea. The first time I had it, I moved to a corner of my office where no one could see me through the door so I could savor a few moments with my mug. I don’t drink it often, but rather save this one for special occasions or when I really just need a moment of quiet.

Five BIG stars for White Symphony! I l love the size of the leaves!! This tea seems so Fairy Realm! Like, a little fae folk would use these leaves as a skirt. Delicate, Magickal, Beautiful! It was my 2023 Summertime Cold Brew / Iced Tea go-to. Adding CUCUMBERS to infuse with White Symphony while cold brewing in the fridge, was the TICKET to summer-tea BLISS!
Frances Barlow –
Delightful, delicious, dainty tea. So smooth with hints of floral and a sweetness reminiscent of wild columbine nectar. Really enjoy the flavor of the young tea leaves and buds. Such a satisfying cup of tea. The little white hairs from the buds were floating on the top of the tea sparkling. Quite an enchanting cup!

White Symphony is what I would describe as a ‘wispy’ tea. It’s small, light, and very difficult to scoop. I ended up using 4 scoops for 1 cup because each scoop was such a tiny amount. But once I got it brewing, I added some tupelo honey. It’s very plain, just a tad dry, and you can barely taste the honey, but it’s very good. I would highly recommend this tea!
